Ingredients

Scale
  • 3 oz fresh spinach (100g)
  • Large handful basil
  • 2 cloves garlic, crushed
  • 2 tbsp lemon juice (about one lemon)
  • 1 cup coconut milk
  • 3 tbsp nutritional yeast
  • 1 tsp salt

Instructions

  1. Blend the fresh spinach, basil, crushed garlic, lemon juice, coconut milk, nutritional yeast, salt, and black pepper in a blender until smooth and creamy.
  2. Heat the blended mixture in a large pan over medium heat, allowing it to simmer for 2-3 minutes.
  3. Cook your pasta in salted boiling water until al dente, approximately 8-10 minutes, reserving some cooking water.
  4. Combine the cooked pasta with the sauce, tossing gently to coat. Serve in bowls, garnished with basil and chili flakes if desired.
