  • 1 cup dried apricots, chopped
  • 1/2 cup shelled pistachios, chopped
  • 1/2 cup sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon ground cardamom (optional)
  • 1/2 cup white chocolate, melted
  • 1/4 cup chopped pistachios for coating

Instructions

  1. Begin by adding 1 cup of chopped dried apricots and 1/2 cup of shelled pistachios to a food processor.
  2. Pulse until they form a fine mixture.
  3. Pour in 1/2 cup of sweetened condensed milk and 1 teaspoon of vanilla extract.
  4. Sprinkle in 1/4 teaspoon of ground cardamom, if desired.
  5. Pulse again until thoroughly combined into a sticky blend.
  6. Roll small amounts of the mixture into bite-sized balls.
  7. Place the truffles on a parchment-lined tray with space between them.
  8. Melt 1/2 cup of white chocolate in a heatproof bowl until smooth.
  9. Dip each truffle into the melted white chocolate, letting excess drip off.
  10. Roll the truffles in the reserved 1/4 cup of chopped pistachios.
  11. Transfer the tray to the refrigerator and chill for at least 1 hour before serving.
