A delightful twist on the classic grilled cheese, featuring creamy cheddar, succulent roast beef, and perfectly toasted bread.

Ingredients

  • 2 slices of bread (white, whole wheat, or sourdough)
  • 1/2 lb thinly sliced roast beef
  • 2 tablespoons butter, softened
  • 2 slices of cheddar cheese
  • 1 tablespoon Dijon mustard (optional)
  • 1 tablespoon mayonnaise
  • 1 small onion, thinly sliced (optional)
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Heat a skillet or griddle over medium heat.
  2. Spread butter generously on one side of each slice of bread.
  3. Layer mayonnaise on the unbuttered side of one slice and Dijon mustard on the other if desired.
  4. Place one slice of bread, buttered side down, in the skillet.
  5. Add a slice of cheddar cheese, then the roast beef, and top with another slice of cheddar.
  6. Cover with the second slice of bread, mayonnaise and mustard sides facing inward.
  7. Cook for about 3-4 minutes on each side until golden brown and the cheese is melted.
  8. Press down gently with a spatula while cooking.
  9. Remove from the skillet and let it sit for a minute before cutting.
  10. Serve hot and enjoy!

Notes

Consider mixing cheeses for extra flavor. Serve with potato chips or tomato soup for a complete meal.
