  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 1 tsp Italian seasoning
  • Salt & pepper to taste
  • 1 cup sour cream
  • 4 oz cream cheese, softened
  • 2 cups cooked egg noodles
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup chopped green onions

Instructions

  1. Prepare the Meat Mixture: In a large skillet over medium heat, cook the ground beef along with the chopped onion and minced garlic. Stir occasionally until the beef is browned and the onion is translucent. Drain any excess fat if necessary.
  2. Add Sauces and Seasonings: Once the beef mixture is cooked, add in the diced tomatoes, tomato sauce, Italian seasoning, and season with salt and pepper. Let it simmer for about 10 minutes.
  3. Mix the Creamy Ingredients: In a separate bowl, combine the sour cream and cream cheese until smooth.
  4. Combine Ingredients: Add the cooked egg noodles to the sour cream mixture, stirring to coat them evenly.
  5. Assemble the Casserole: Preheat your oven to 350°F (175°C). In a greased baking dish, layer half of the noodle mixture, the beef mixture, and then the remaining noodle mixture on top.
  6. Top it Off: Sprinkle shredded cheddar cheese and chopped green onions over the top.
  7. Bake to Perfection: Bake in the preheated oven for about 25 to 30 minutes, or until the top is bubbly and golden brown.

Notes

Consider adding red pepper flakes for heat or incorporating vegetables like bell peppers or spinach.
