A delightful Brazilian dish featuring succulent chicken simmered in creamy coconut milk with garlic and lime.

Ingredients

  • 1 lb chicken pieces (thighs or breasts)
  • 1 can coconut milk
  • 2 cloves garlic, minced
  • Juice of 1 lime
  • 1 tsp ground cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • Oil for cooking (olive or coconut)

Instructions

  1. In a large skillet over medium heat, add a splash of your chosen oil.
  2. Season the chicken pieces generously with salt, pepper, cumin, and paprika.
  3. Sear the seasoned chicken in the skillet until it’s golden brown on all sides, about 5-7 minutes.
  4. Add the minced garlic and cook for about a minute, infusing the oil with flavor.
  5. Pour in the coconut milk and lime juice, stirring gently to combine all ingredients.
  6. Reduce the heat and simmer the chicken for 20-25 minutes until cooked through and the sauce thickens slightly.
  7. Serve hot, ideally with fluffy rice or your choice of side.
