  • 1 cup long-grain rice
  • 1 medium onion, chopped
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1 tsp Cajun seasoning
  • 1/2 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil
  • 1/2 cup chopped green onions (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add the sliced Cajun sausage and cook for about 5 minutes.
  2. Add the chopped onion, bell pepper, and minced garlic to the skillet and sauté until softened, about 3 minutes.
  3. Stir in the long-grain rice, Cajun seasoning, smoked paprika, salt, and black pepper. Cook for about 2 minutes.
  4. Pour in the chicken broth and stir to combine, then bring to a simmer.
  5. Cover and reduce heat to low, allowing the rice to cook for 18-20 minutes until tender.
  6. Remove from heat and garnish with green onions if desired.

Notes

Use high-quality Cajun sausage and adjust spices to taste. Avoid overcooking the rice.
