  • 2 tablespoons Olive Oil
  • 2 sliced Leeks
  • 2 cups sliced Mushrooms (cremini or button)
  • 2 cloves minced Garlic
  • 1 cup Heavy Cream
  • 1 cup grated Gruyere Cheese
  • Salt and Pepper to taste
  • Fresh Parsley, chopped for garnish

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the sliced leeks and sauté until golden and caramelized, about 10 minutes.
  3. Add sliced mushrooms and minced garlic to the skillet, cooking until the mushrooms are browned and tender, about 5-7 minutes.
  4. Lower heat and pour in the heavy cream, letting it simmer for a few minutes to thicken.
  5. Stir in the grated Gruyere cheese until melted and the sauce is smooth. Season with salt and pepper.
  6. Toss the cooked pasta in the skillet, ensuring it is well coated with the sauce.
  7. Serve hot, garnished with freshly chopped parsley.
