Cheesy Beef Enchiladas Tortellini

A comforting twist on enchiladas featuring cheese tortellini, ground beef, and a creamy blend of spices.

Ingredients

  • 1 pound ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 tablespoon taco seasoning
  • 1 package (9 oz) cheese tortellini
  • 2 cups shredded cheddar cheese
  • 1 cup enchilada sauce
  • ½ cup sour cream
  • Olive oil

Instructions

  1. Start by heating a drizzle of olive oil in a large skillet over medium heat.
  2. Toss in the diced onion and sauté for about 3-4 minutes until it becomes translucent.
  3. Add the minced garlic and sauté for another minute until fragrant.
  4. Introduce the ground beef and cook until browned, around 5-7 minutes.
  5. Stir in the black beans, diced tomatoes, and taco seasoning, allowing to simmer for 5 minutes.
  6. Meanwhile, cook the cheese tortellini in salted boiling water according to package instructions.
  7. Preheat your oven to 350°F (175°C).
  8. Mix the cooked tortellini with the beef mixture in the skillet.
  9. Spread a layer of enchilada sauce in a baking dish, add the tortellini mixture, pour remaining sauce on top, and sprinkle with cheddar cheese.
  10. Cover with foil and bake for 20 minutes, then remove foil and bake for an additional 10-15 minutes until cheese is melted and golden.

Notes

For an extra kick, add more taco seasoning or some diced jalapeños. Garnish with cilantro for a fresh touch.
