Cheesy Beef Taco-Stuffed Tortilla Pockets

Delicious tortilla pockets filled with seasoned ground beef, melted cheddar cheese, and fresh vegetables, perfect for a family meal.

Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning mix
  • 1/2 cup water
  • 4 large flour tortillas
  • 1 1/2 cups shredded cheddar cheese
  • 1 cup shredded lettuce
  • 1 medium tomato, diced
  • 1/2 cup sour cream
  • 1/4 cup salsa
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the ground beef by heating the olive oil in a large skillet over medium heat. Add the ground beef and break it apart. Cook for about 5-7 minutes or until browned.
  2. Add the taco seasoning mix and pour in the water. Simmer for 3-5 minutes until thickened. Season with salt and pepper.
  3. Warm the tortillas in a separate pan or microwave for 15-20 seconds until soft.
  4. Assemble by placing beef mixture in the center of each tortilla and topping with cheddar cheese.
  5. Fold the tortillas into pockets, rolling them tightly. Cook seam-side down in a skillet, greased lightly, for 2-3 minutes on each side until golden brown.
  6. Serve with salsa and sour cream for dipping. Enjoy!
