1 lb ground beef
1 packet taco seasoning mix
1/2 cup water
4 large flour tortillas
1 1/2 cups shredded cheddar cheese
1 cup shredded lettuce
1 medium tomato, diced
1/2 cup sour cream
1/4 cup salsa
1 tbsp olive oil
Salt and pepper to taste
Instructions
Cook the ground beef by heating the olive oil in a large skillet over medium heat. Add the ground beef and break it apart. Cook for about 5-7 minutes or until browned.
Add the taco seasoning mix and pour in the water. Simmer for 3-5 minutes until thickened. Season with salt and pepper.
Warm the tortillas in a separate pan or microwave for 15-20 seconds until soft.
Assemble by placing beef mixture in the center of each tortilla and topping with cheddar cheese.
Fold the tortillas into pockets, rolling them tightly. Cook seam-side down in a skillet, greased lightly, for 2-3 minutes on each side until golden brown.
Serve with salsa and sour cream for dipping. Enjoy!
