Cheesy Steak Quesadillas blend savory steak, melted cheese, and vibrant vegetables for a delicious comfort food experience.

  • 1 pound Skirt Steak, diced into 1-inch pieces
  • 1 Tbsp Vegetable Oil
  • 2 Tbsp Taco Seasoning
  • 1 Red Bell Pepper, diced
  • 1 Yellow Onion, diced
  • 1/4 cup Salsa
  • 1 1/2 cups Cheddar Cheese, shredded
  • 1 1/2 cups Monterey Jack Cheese, shredded
  • 4 Flour Tortillas, burrito size

Instructions

  1. Heat the vegetable oil in a large skillet over medium heat. Add the diced skirt steak in an even layer and sprinkle generously with taco seasoning.
  2. Sauté the steak for 1 to 2 minutes on each side until it’s beautifully browned but not overcooked.
  3. Add the diced red bell pepper and onions to the skillet, stirring them together with the steak. Sauté for about 5 to 7 minutes until vegetables soften.
  4. Pour in salsa and toss the steak and vegetables until everything is nicely coated. Sauté for an additional couple of minutes.
  5. Remove the skillet from heat and heat a griddle over medium-high heat.
  6. Place the flour tortillas on the hot griddle. On each tortilla, sprinkle some cheddar and Monterey Jack cheese, then pile on the steak mixture. Finish with more cheese on top.
  7. Fold each tortilla in half to form a half-moon shape and press slightly.
  8. Cook the quesadillas until one side is golden brown (about 1 to 2 minutes), flip and repeat for the other side.
  9. Remove the quesadillas from the skillet, slice into wedges, and serve warm with your favorite dipping sauces!

Notes

Brush tortillas lightly with butter before grilling for extra crispiness. Swap in different cheeses or add fresh herbs for more flavor.
