Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 ripe avocado
  • 1 cup shredded cheddar and mozzarella cheese blend
  • 4 slices whole wheat or sourdough bread
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Prepare the chicken by seasoning the boneless, skinless chicken breasts with salt, pepper, and garlic powder.
  2. Cook the chicken in a skillet over medium heat with olive oil for about 6 minutes on each side until fully cooked.
  3. Assemble the sandwich by layering avocado, chicken strips, and shredded cheese on a slice of bread. Top with another slice.
  4. Grill the sandwich in the skillet with more olive oil for 3-4 minutes on each side until golden brown and cheese is melted.
  5. Serve immediately while hot and melty.
