A delightful dish combining tender shredded chicken, zesty salsa, and gooey cheese for a comforting meal perfect for busy weeknights.

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup salsa
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1 cup cooked rice (optional)
  • 1 can black beans, drained and rinsed (optional)
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Combine the shredded chicken, salsa, cumin, salt, pepper, and optional ingredients in a mixing bowl.
  3. Transfer the mixture to a baking dish and spread evenly.
  4. Sprinkle the shredded cheese on top.
  5. Bake for 25-30 minutes or until the cheese is melted and bubbly.
  6. Garnish with fresh cilantro if desired and serve warm.

Notes

For a spicier version, add chopped jalapeños or red onion. You can also use lower-fat cheese for a lighter dish.
