A delightful dish combining shredded chicken, zesty salsa, and melted cheese, baked to perfection.

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup salsa
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1 cup cooked rice (optional)
  • 1 can black beans, drained and rinsed (optional)
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Combine the shredded chicken, salsa, cumin, salt, pepper, and optional black beans with rice in a large mixing bowl.
  3. Transfer the mixture to a baking dish and spread it evenly.
  4. Sprinkle the shredded cheese generously on top.
  5. Bake for 25-30 minutes until the cheese is golden and bubbly.
  6. Garnish with fresh cilantro if desired, and serve warm.

Notes

Adding sour cream or guacamole on top elevates the dish. Use a mix of salsas for balanced flavor. Rotisserie chicken can save time.
