  • 1/4 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 4 large eggs
  • 3/4 cup granulated sugar
  • 1 tsp vanilla extract
  • 1/4 cup milk
  • 1 cup heavy cream
  • 2 tbsp powdered sugar
  • 1 tsp vanilla extract (for whipped cream)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 10×15” jelly roll pan with parchment paper.
  2. Sift together the flour, cocoa powder, baking powder, and salt.
  3. Beat the eggs until thick and pale, then gradually add the granulated sugar and vanilla extract.
  4. Fold in the sifted dry ingredients and milk gently.
  5. Pour the batter into the prepared pan, smoothing it out evenly.
  6. Bake for 10-12 minutes, or until it springs back when touched.
  7. Roll the cake while still warm with parchment paper or a clean towel.
  8. Whip together the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
  9. Unroll the cake once cool, spread the filling, and re-roll carefully.
  10. Chill in the refrigerator before serving, optionally dusting with cocoa powder or powdered sugar.

Notes

For added texture, consider adding chocolate chips or nuts to the filling. Ensure the cake is cool before filling to avoid melting the cream.
