1/2 cup shredded coconut
1/4 cup breadcrumbs
1/4 cup grated parmesan cheese
1 large egg
2 cloves garlic (minced)
1 tbsp ginger (grated)
1 tbsp coconut oil (melted)
1/2 tsp chili flakes (optional)
Salt and pepper to taste
1/2 cup honey (for dipping)
Instructions
Preheat the oven to 375°F (190°C).
Prepare a baking sheet by lining it with parchment paper.
Mix the ground chicken, shredded coconut, breadcrumbs, parmesan cheese, egg, minced garlic, grated ginger, melted coconut oil, chili flakes, salt, and pepper in a large bowl until combined.
Form the mixture into 1-inch meatballs.
Bake the meatballs on the baking sheet for about 20-25 minutes or until golden brown and cooked through.
Serve with honey on the side for dipping.
