A luxurious dish featuring tender steak medallions in a rich Alfredo sauce with gorgonzola, spinach, and sun-dried tomatoes.

Ingredients

  • 1 pound steak medallions (eye of round recommended)
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste
  • 1 pound fettuccine
  • 1/4 pound (1 stick) unsalted butter
  • 2 cups heavy cream
  • 2 cups spinach
  • 1/4 teaspoon nutmeg
  • 1 cup Parmesan cheese, grated
  • 4 ounces gorgonzola crumbles
  • 4 tablespoons balsamic glaze
  • 1/4 cup sun-dried tomatoes, chopped
  • 2 ounces gorgonzola crumbles (for topping)

Instructions

  1. Begin by seasoning the steak medallions generously with salt and pepper. For added flavor, place them in a zip-lock bag with the balsamic vinegar and allow them to marinate for anywhere from 30 minutes to 4 hours.
  2. Heat a large nonstick skillet over medium heat and add the marinated steak. Cook to your desired doneness—medium-rare is perfect for this dish!
  3. Transfer the steaks to a plate and cover with foil to keep warm while you make the sauce.
  4. While your steak rests, bring a pot of water to a boil for the fettuccine. Cook according to package directions until just shy of al dente, then drain, remembering to reserve about 1 cup of the pasta water.
  5. In a large saucepan, melt the butter over medium heat and stir in the heavy cream. Once combined, add the nutmeg and spinach, cooking until the spinach wilts, which should take about 5 minutes.
  6. Gradually stir in the Parmesan cheese, and season to taste with salt and pepper.
  7. Add the drained pasta to the sauce, stirring to coat it well. Allow it to cook for an additional 2-3 minutes, adjusting the consistency with reserved pasta water as needed.
  8. Finally, remove from heat and mix in the gorgonzola crumbles, leaving some chunks for texture.
  9. To serve, divide the creamy pasta amongst individual plates. Top each serving with sliced steak medallions and drizzle with balsamic glaze.
  10. Sprinkle chopped sun-dried tomatoes over the top and add additional gorgonzola crumbles for a delightful finish.
