  • 1 1/2 cups whole wheat flour
  • 1/2 cup rolled oats
  • 2 large eggs
  • 1/4 cup milk
  • 1/4 cup olive oil
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 cup shredded cheddar cheese (optional)
  • 2 tablespoons fresh herbs (such as chives or parsley), chopped

Instructions

  1. Preheat your oven to 350°F (175°C). Grease or line a muffin tin with paper liners.
  2. Whisk together the cottage cheese, eggs, milk, and olive oil until smooth.
  3. Mix the whole wheat flour, rolled oats, baking powder, baking soda, garlic powder, salt, and pepper in another bowl.
  4. Add the dry ingredients to the wet mixture while stirring gently until just combined.
  5. Fold in the cheese and herbs, if using.
  6. Divide the batter among the muffin cups, filling each about 3/4 full.
  7. Bake for 18-20 minutes until a toothpick inserted in the center comes out clean.
  8. Cool in the pan for 5 minutes before transferring to a wire rack.
