A delicious creamy soup combining broccoli and cauliflower, rich in nutrients and flavor.

Ingredients

  • 900 grams of broccoli, chopped
  • 450 grams of cauliflower, chopped
  • 5 cups of milk
  • Salt to taste
  • 1 onion, chopped
  • 1 carrot, chopped
  • 1 bell pepper, chopped
  • 1 garlic clove, minced
  • 2 tablespoons of olive oil
  • Parsley to taste
  • 200 grams of red cherry tomatoes, halved

Instructions

  1. Prep your vegetables. Chop the broccoli and cauliflower into small florets.
  2. Simmer the milk in a large pot over medium heat, adding a pinch of salt.
  3. Add the broccoli and cauliflower florets, cooking until tender (15-20 minutes).
  4. Heat the olive oil in a skillet over medium heat.
  5. Combine the chopped onion, carrot, bell pepper, and minced garlic and sauté until soft and translucent.
  6. Blend the cooked vegetables with an immersion blender until smooth.
  7. Stir in the sautéed vegetables into the creamy mixture, seasoning with additional salt as needed.
  8. Garnish with chopped parsley and halved cherry tomatoes. Serve hot.

Notes

For an extra flavor boost, consider adding nutmeg, lemon juice, or red pepper flakes.
