  • 4 boneless, skinless chicken breasts
  • 1 cup flour
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 large eggs
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup grated mozzarella cheese
  • 1 tbsp fresh parsley, chopped

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Season the chicken breasts generously with salt and black pepper.
  3. Dredge each piece of chicken in the flour, ensuring an even coating.
  4. Dip the floured chicken into the beaten eggs.
  5. Coat them in a mixture of breadcrumbs and grated Parmesan cheese.
  6. Heat olive oil in a skillet over medium heat.
  7. Lay the chicken in the pan, cooking each side for 4-5 minutes.
  8. Remove the chicken from the skillet and set aside.
  9. Add minced garlic to the skillet and let it sizzle for 1-2 minutes.
  10. Pour in the chicken broth, followed by the heavy cream.
  11. Bring the sauce to a gentle simmer and let it thicken for 3-5 minutes.
  12. Return the chicken to the skillet and sprinkle mozzarella cheese on top.
  13. Cover the skillet and let the cheese melt, about 2-3 minutes.
  14. Garnish with fresh parsley before serving.

Notes

For a creamier sauce, consider adding a splash of milk. Ensure the chicken reaches an internal temperature of 165°F (75°C).
