  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups heavy cream
  • 1 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon red pepper flakes (optional)
  • 2 cups kale or spinach, chopped
  • Salt and pepper to taste
  • Crusty bread for serving (optional)

Instructions

  1. Begin heating the olive oil in a large pot over medium heat until it shimmers.
  2. Add the Italian sausage, breaking it apart, and brown for about 5-7 minutes.
  3. Stir in the chopped onion and cook for 3-4 minutes until translucent.
  4. Introduce the minced garlic, cooking for an additional minute.
  5. Pour in the chicken broth and allow the mixture to come to a gentle simmer for about 10 minutes.
  6. Reduce the heat to low, slowly stir in the heavy cream, and sprinkle in the Parmesan cheese.
  7. Add the Italian seasoning and optional red pepper flakes.
  8. Fold in the chopped kale or spinach, seasoning with salt and pepper to taste.
  9. Serve hot with crusty bread to soak up the soup.
