A creamy and refreshing passion fruit ice cream that captures the essence of summer with sweet and tart flavors.

Ingredients

  • 2 cups heavy cream
  • 1 cup whole milk
  • 3/4 cup granulated sugar
  • 1/4 cup passion fruit pulp (fresh or frozen)
  • 1 teaspoon vanilla extract
  • 1 pinch salt
  • 4 large egg yolks

Instructions

  1. Combine the heavy cream, whole milk, and granulated sugar in a medium saucepan. Heat over medium heat until the sugar dissolves.
  2. Whisk the egg yolks until creamy and pale in a separate bowl.
  3. Add 1/2 cup of the warm cream mixture to the egg yolks, whisking constantly to temper the eggs.
  4. Pour the egg mixture back into the saucepan with the remaining cream mixture. Stir continuously over medium-low heat until thickened.
  5. Strain the custard through a fine mesh sieve into a clean bowl.
  6. Stir in the passion fruit pulp, vanilla extract, and salt.
  7. Cool to room temperature, then refrigerate for at least 4 hours or overnight.
  8. Churn the mixture in an ice cream maker according to the manufacturer’s instructions.
  9. Transfer the ice cream to an airtight container and freeze for at least 4 hours or until firm.

Notes

For best results, ensure your ice cream maker bowl is fully frozen before use.
