Ingredients

Scale
  • 4 chicken thighs
  • 2 tbsp olive oil
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup sun-dried tomatoes
  • 3 cloves garlic, minced
  • 1 tsp Italian seasoning
  • 1/2 cup spinach, chopped
  • 1/4 cup parmesan cheese, finely grated

Instructions

  1. Heat the olive oil in a large pan over medium heat.
  2. Add the chicken thighs, cooking for 5-7 minutes on each side until golden brown and cooked through.
  3. Remove the chicken from the pan and set aside.
  4. Sauté the minced garlic, sun-dried tomatoes, and Italian seasoning for 2-3 minutes until fragrant.
  5. Pour in the heavy cream and chicken broth, stirring gently to combine.
  6. Simmer the mixture for approximately 5 minutes until creamy.
  7. Add the chopped spinach and parmesan, mixing until melted.
  8. Return the chicken to the pan and cook for an additional 5 minutes in the sauce before serving.

Notes

For a lighter option, substitute heavy cream with Greek yogurt or coconut cream. Ensure the chicken is patted dry before searing for a perfect crust.
