A flavor-packed, satisfying crispy chicken sandwich with a zesty dill kick, encased in a warm brioche bun with creamy dill mayo and fresh lettuce.

  • 2 large chicken breasts (boneless and skinless)
  • 1 cup all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1 tablespoon dried dill
  • 2 large eggs
  • 1/4 cup milk
  • 1 cup panko breadcrumbs
  • Vegetable oil for frying
  • 4 brioche buns
  • 1/2 cup mayonnaise
  • 2 tablespoons chopped fresh dill
  • 1 tablespoon lemon juice
  • 1 cup shredded lettuce
  • 8 slices of dill pickle

Instructions

  1. Slice each chicken breast in half horizontally to create four thinner pieces and pound to an even thickness of about 1/2 inch.
  2. In a shallow dish, combine flour, salt, black pepper, garlic powder, onion powder, and dried dill.
  3. In another bowl, whisk the eggs and milk together until smooth.
  4. Coat each piece of chicken in the seasoned flour, then dip into the egg mixture, and finally coat thoroughly in panko breadcrumbs.
  5. Heat vegetable oil in a skillet over medium-high heat and fry the chicken for 4-5 minutes on each side until golden brown, then drain on paper towels.
  6. In a mixing bowl, whisk together mayonnaise, fresh dill, and lemon juice to create dill mayo.
  7. Lightly toast brioche buns until golden.
  8. Spread dill mayo on both sides of each bun, layer with shredded lettuce, add a crispy piece of chicken, and top with dill pickle slices.
  9. Serve warm and enjoy!

Notes

Double-coat the chicken in breadcrumbs for extra crunch. Experiment with toppings or dietary variations like gluten-free substitutes.
