A refreshing salad featuring crunchy cucumbers and Chinese cabbage, topped with a zesty yogurt dressing and sautéed onions.

Ingredients

  • Chinese Cabbage (Shredded)
  • Cucumber (Thinly Sliced)
  • Salt (to taste)
  • Sweet Red Pepper (Sliced)
  • Olive Oil
  • Onion (Finely Chopped)
  • Sugar (1 tsp)
  • Green Onion (Chopped)
  • Thick Yogurt (3 tablespoons)
  • Dried Tomatoes (Chopped)
  • Italian Herbs
  • Mustard Seeds
  • Apple Cider Vinegar
  • Garlic (Minced)

Instructions

  1. Combine the shredded Chinese cabbage and thinly sliced cucumber in a large bowl.
  2. Lightly sprinkle with salt to taste and let sit for 10 minutes.
  3. Heat olive oil in a small pan over medium heat, then add finely chopped onion and sauté until translucent.
  4. Add sweet red pepper slices to the pan and cook for another 2-3 minutes.
  5. Stir together the yogurt, sugar, dried tomatoes, Italian herbs, mustard seeds, apple cider vinegar, and garlic in a separate small bowl until well combined.
  6. Pour the yogurt dressing over the cabbage and cucumbers, then add the sautéed onion and red pepper.
  7. Toss everything together gently until well-coated.
  8. Garnish with chopped green onion before serving.

Notes

For added crunch, consider incorporating nuts or seeds. To serve chilled or at room temperature for optimal flavor.
