  • 1 pound spinach (fresh or frozen), tender and vibrant
  • 2 tablespoons unsalted butter, rich and creamy
  • 2 cloves garlic, minced, fragrant and flavorful
  • 1 cup heavy cream, luscious and velvety
  • 1 tablespoon lemon zest, zesty and bright
  • 2 tablespoons lemon juice (freshly squeezed), refreshing and tangy
  • 1/8 teaspoon freshly grated nutmeg, warm and aromatic
  • Salt and pepper to taste, to enhance the flavors
  • 1/2 cup grated Parmesan cheese (plus extra for topping), nutty and savory
  • 4 large fresh eggs, farm-fresh for that perfect yolk

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. If using fresh spinach, wash the leaves thoroughly under cool running water and let them drain well. If using frozen spinach, make sure it’s completely thawed and squeeze out any excess moisture.
  3. In a large skillet over medium heat, melt the butter until it’s bubbly and warm. Add the minced garlic, sautéing until fragrant, usually about 30 seconds.
  4. Now, add the spinach to the skillet, cooking until it’s just wilted. Season with a sprinkle of salt and pepper to taste.
  5. Once the spinach is wilted, lower the heat and pour in the heavy cream. Stir in the lemon zest, lemon juice, and freshly grated nutmeg, letting the mixture heat through. Add the grated Parmesan cheese, folding it in until fully combined, and adjust the seasoning as needed.
  6. Create small wells in the creamy spinach mixture and carefully crack an egg into each well, spacing them apart.
  7. Sprinkle additional Parmesan cheese over the eggs.
  8. Transfer the skillet to your preheated oven and bake for about 12 to 15 minutes until the egg whites are set and the yolks remain slightly runny.
  9. Remove the skillet from the oven and let it rest for a few minutes before serving.

Notes

For extra flavor, consider adding red pepper flakes or cherry tomatoes. Fresh herbs like parsley or chives can also enhance your dish.
