  • 1/2 cup vegetable oil
  • 1/2 cup unsweetened cocoa powder
  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup mini marshmallows (optional)
  • 1 cup chocolate chips (for frosting)
  • 1/2 cup heavy cream (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour a 9×13-inch baking pan.
  2. Combine Coca-Cola, vegetable oil, and cocoa powder in a saucepan over medium heat, stirring until it boils, then remove from heat.
  3. Whisk together flour, sugar, baking powder, baking soda, and salt in a large mixing bowl.
  4. Pour the hot Coca-Cola mixture into the dry ingredients and stir until just combined.
  5. Add eggs and vanilla, mixing until smooth. Optionally fold in mini marshmallows.
  6. Pour the batter into the prepared pan and bake for 30-35 minutes.
  7. Prepare the frosting by melting chocolate chips and heavy cream in a saucepan over low heat.
  8. Once the cake has cooled, pour and spread the frosting over it.
