  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract (optional)
  • 1/4 cup colored sugar (optional, for rolling)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Whisk together the flour, baking soda, and baking powder in a large bowl.
  3. Cream the softened butter and granulated sugar together until smooth and fluffy.
  4. Add in the egg, vanilla extract, and almond extract (if using).
  5. Gradually mix in the dry ingredients until just combined.
  6. Roll the dough into small balls and coat them in colored sugar.
  7. Place the dough balls on the baking sheet and press down slightly with a fork.
  8. Bake for 8-10 minutes until the edges are lightly golden.
  9. Cool on the baking sheet for a few moments, then transfer to a wire rack to cool completely.

Notes

For best results, chill the dough for at least 30 minutes before baking, and don’t skip the parchment paper.
