A smooth and creamy cheesecake topped with luscious cherry pie filling, perfect for any occasion.

Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup melted butter
  • 3 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1/2 cup sour cream
  • 1/2 cup heavy cream
  • 1 cup cherry pie filling
  • Fresh cherries (for garnish)
  • Whipped cream (for garnish)

Instructions

  1. Preheat your oven to 325°F (165°C) and grease a 9-inch springform pan, lining the bottom with parchment paper.
  2. Combine the graham cracker crumbs and melted butter in a medium bowl until well mixed.
  3. Press the crumb mixture into the bottom of the prepared springform pan. Bake for 10 minutes, then set aside to cool.
  4. Beat the softened cream cheese and granulated sugar in a large bowl until smooth and creamy.
  5. Add the vanilla extract and eggs one at a time, mixing well after each addition.
  6. Stir in the sour cream and heavy cream until smooth and fully incorporated.
  7. Pour the cheesecake filling over the cooled crust and smooth the top with a spatula. Bake for 50-60 minutes, until the center is set but slightly jiggly.
  8. Turn off the oven and let the cheesecake cool inside for 1 hour, then refrigerate for at least 4 hours or overnight.
  9. Top with cherry pie filling, fresh cherries, and whipped cream. Slice, serve, and enjoy!

Notes

For a beautiful presentation, reserve some fresh cherries for garnish when serving.
