Delightful dessert tartlets featuring a luscious cream cheese filling topped with cherry jam, fresh cherries, and crunchy pistachios.

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/4 cup melted butter
  • 1/2 cup powdered sugar
  • 2 cups cream cheese, softened
  • 1 teaspoon vanilla extract
  • 1 cup cherry jam
  • 1/2 cup chopped pistachios
  • 1/2 cup fresh cherries, pitted and halved

Instructions

  1. Preheat your oven to 350°F (175°C). Prepare your muffin tin or tartlet pans by lightly greasing them with cooking spray or butter.
  2. In a large mixing bowl, combine graham cracker crumbs, sugar, melted butter, and powdered sugar. Mix well until the consistency resembles wet sand.
  3. Press the crumb mixture firmly into the bottom and up the sides of the tartlet pans, ensuring they are evenly coated to create a sturdy crust.
  4. Bake the crusts in your preheated oven for 8-10 minutes or until they turn a light golden brown. Once done, remove and allow the crusts to cool completely.
  5. While the crusts cool, let’s create the cream cheese filling. In a bowl, beat together softened cream cheese and vanilla extract until smooth and creamy.
  6. When the crusts are cooled, generously spoon the cream cheese filling into each tartlet, evening it out with a spatula.
  7. To prepare the cherry pistachio topping, heat the cherry jam in a small saucepan over low heat for 3-5 minutes. Stir occasionally until it’s warmed and has a slightly thinner consistency.
  8. Spoon the warmed cherry jam over the cream cheese layer in each tartlet. Add fresh halved cherries and chopped pistachios on top.
  9. Cover and refrigerate the tartlets for at least 1 hour to allow them to set before serving.

Notes

For a smoother cream cheese filling, ensure the cream cheese is at room temperature. You can customize the toppings using different nuts or jams.
