Delightful tartlets featuring a flaky crust, creamy pistachio filling, and a sweet-tart cherry topping, perfect for any occasion.

Ingredients

  • 1 1/4 cups all-purpose flour
  • 1/4 cup powdered sugar
  • 1/2 cup unsalted butter, cold and cubed
  • 1 egg yolk
  • 2 tbsp ice water
  • 1/2 cup shelled pistachios
  • 1/4 cup heavy cream
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract
  • 2 tbsp unsalted butter, softened
  • 1/4 cup cherry jam or preserves
  • Fresh cherries, pitted
  • Crushed pistachios

Instructions

  1. Preheat your oven to 350°F (175°C). Prepare your mini tartlet pans by greasing and flouring them.
  2. Combine the flour and powdered sugar in a food processor, pulsing briefly to blend. Add the cold cubed butter, and pulse until it resembles coarse crumbs. Add the egg yolk and ice water, pulsing until a cohesive ball forms.
  3. Roll the dough into a ball, flatten it into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
  4. Roll out the chilled dough on a lightly floured surface, cut into circles for your tartlet pans, and press the dough into the pans.
  5. Bake for 10-12 minutes, or until the edges are golden brown, and allow to cool completely.
  6. Prepare the filling by pulsing the shelled pistachios in a food processor until finely ground. In a mixing bowl, combine ground pistachios, heavy cream, powdered sugar, vanilla extract, and softened butter, mixing until smooth.
  7. Spread a layer of cherry jam into each cooled tartlet crust, then pipe or spoon the smooth pistachio filling on top.
  8. Top with fresh cherries and sprinkle with crushed pistachios.

Notes

Ensure your butter is cold for a flaky texture. Allow crusts to cool completely before adding the filling to prevent sogginess.
