  • 2 tablespoons cornstarch
  • 1 tablespoon sugar
  • 2 large eggs
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/4 teaspoon cream of tartar
  • 2 tablespoons melted butter
  • Powdered sugar for dusting

Instructions

  1. Sift together the flour, cornstarch, sugar, and baking powder in a mixing bowl.
  2. Whisk in a separate bowl the egg yolks, milk, vanilla extract, and melted butter until smooth.
  3. Add the sifted dry ingredients to the wet mixture, mixing gently until just combined.
  4. Whisk the egg whites with cream of tartar in a clean bowl until stiff peaks form.
  5. Fold the whipped egg whites into the batter in three additions, being careful not to deflate them.
  6. Heat a non-stick skillet over low heat and lightly grease it.
  7. Spoon the batter onto the skillet, covering with a lid and cooking for 3-4 minutes.
  8. Flip the pancakes and cook for an additional 2-3 minutes until golden.
  9. Serve immediately, dusted with powdered sugar and topped with fruits or syrup.

Notes

For the best results, whisk egg whites to stiff peaks and cook on low heat for even fluffiness.
