A delicious and nutritious meatloaf made with lean ground chicken, garlic, and Parmesan, perfect for family dinners.

  • 1 lb ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 egg
  • 1/4 cup milk
  • 1/4 cup fresh parsley, chopped
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • 1/4 cup shredded mozzarella cheese (optional, for topping)
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Prepare the loaf pan by greasing it or lining it with parchment paper.
  3. Combine the ground chicken, breadcrumbs, grated Parmesan cheese, minced garlic, chopped onion, egg, milk, fresh parsley, salt, and pepper in a large mixing bowl.
  4. Shape the mixture into a loaf and transfer it to the prepared pan.
  5. Add olive oil over the top of the meatloaf.
  6. Bake for 45-50 minutes, or until the internal temperature reaches 165°F (74°C).
  7. Add mozzarella cheese during the last 5 minutes of baking, if desired.
  8. Rest the meatloaf for 10 minutes before slicing.
  9. Garnish with fresh parsley before serving.

Notes

Avoid over-mixing to maintain a tender texture. You can add finely chopped vegetables for extra nutrients.
