Gooey Salted Caramel Cream Cheese Cupcakes

Delicious cupcakes filled with salted caramel and topped with cream cheese frosting.

  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 8 oz cream cheese, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup whole milk
  • 1/2 cup brown sugar, packed
  • 1/4 cup unsalted butter
  • 1/4 cup heavy cream
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon sea salt
  • 8 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1/4 cup salted caramel sauce
  • 1/4 teaspoon vanilla extract
  • A pinch of sea salt
  • Drizzle of salted caramel sauce (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a 12-cup muffin tin with cupcake liners.
  2. Whisk together the flour, baking powder, baking soda, and salt in a medium bowl.
  3. Beat together the softened butter, cream cheese, and granulated sugar until light and fluffy in a large bowl.
  4. Add the eggs one at a time, beating well after each addition, then mix in the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the milk.
  6. Spoon the batter into the cupcake liners, filling them about 2/3 full.
  7. Bake for 18-22 minutes or until a toothpick inserted into the center comes out clean.
  8. Let the cupcakes cool completely on a wire rack.
  9. Make the salted caramel filling by melting brown sugar, butter, and heavy cream over medium heat.
  10. Remove from heat and stir in vanilla extract and sea salt, allowing it to cool slightly.
  11. Cut a hole in each cooled cupcake and fill with the salted caramel sauce.
  12. Frost each cupcake with the cream cheese frosting.
  13. Drizzle extra caramel sauce over the frosting and top with sea salt for garnish.

Notes

For added texture, consider toasting nuts and sprinkling on top before adding the caramel drizzle.
