  • 46 oz fresh salmon fillets
  • 2 tbsp soy sauce or coconut aminos
  • 1 tbsp maple syrup or brown sugar
  • 2 tbsp olive oil
  • 2 tbsp lime juice
  • 2 cloves crushed garlic
  • ½ tsp kosher salt
  • 2 tsp Tajin
  • 1 tsp paprika
  • 1 tsp chili powder
  • 1 large avocado, diced
  • 1 large mango, diced
  • 1 small red bell pepper, diced
  • 2 tbsp finely chopped cilantro
  • 1 seeded and minced jalapeño
  • ¼ cup finely diced red onion
  • 2 tbsp fresh lime juice (for salsa)
  • Additional salt to taste

Instructions

  1. Whisk together the soy sauce, olive oil, maple syrup, lime juice, garlic, and spice blend in a large bowl.
  2. Marinate the salmon fillets in the mixture for at least 20 minutes or overnight for best flavor.
  3. Combine the diced avocado, mango, red bell pepper, chopped cilantro, minced jalapeño, and red onion in a separate bowl.
  4. Drizzle with lime juice and sprinkle with salt, mixing gently to combine.
  5. Preheat your grill to medium-high (400-450°F) and brush the grates with oil.
  6. Place the marinated salmon skin-side down on the grill and grill for 5-7 minutes, flipping carefully.
  7. Serve the salmon atop a bed of mango salsa.

Notes

For a delightful addition, serve with coconut rice. Store leftovers separately to maintain freshness.
