  • 1 can (15 oz) diced tomatoes
  • 1 can (15 oz) corn, drained
  • 1 can (15 oz) pinto beans, drained and rinsed
  • 1 can (15 oz) diced potatoes
  • 1 small onion, diced
  • 2 cups beef broth
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste

Instructions

  1. Brown the beef in a skillet over medium heat, breaking it into small pieces. Drain any excess fat.
  2. Combine the browned beef, diced tomatoes (with juices), corn, rinsed pinto beans, diced potatoes, and diced onion in your Crock Pot.
  3. Add the beef broth to create a rich soup base.
  4. Season with chili powder, garlic powder, smoked paprika, salt, and pepper, adjusting to taste.
  5. Cook on low for 6–8 hours or high for 3–4 hours until flavors meld.
  6. Serve warm, stirring well before enjoying.
