  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 large egg
  • ½ cup raspberry jam

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Whisk together the flour, baking powder, and salt in a bowl.
  3. Beat the softened butter and powdered sugar until light and fluffy. Add in the vanilla extract and egg, mixing until smooth.
  4. Add the dry ingredients to the wet mixture, stirring gently until just combined.
  5. Roll out the dough on a floured surface to about 1/4 inch thick and cut into heart shapes.
  6. Place half of the cookies on the baking sheet and spoon raspberry jam in the center of each.
  7. Top with the remaining cookies, pressing down lightly to seal.
  8. Bake for 10-12 minutes or until the edges are golden. Cool on a wire rack before serving.

Notes

Chill the dough if it’s too sticky, and avoid overmixing to keep cookies tender. Experiment with different jams for variations.
