A delightful dessert that combines creamy white chocolate with tart fresh raspberries, creating a light and airy mousse that is perfect for any occasion.

  • 1 cup white chocolate chips
  • 1 cup heavy cream
  • 1/2 cup mascarpone cheese, softened
  • 2 tbsp powdered sugar (or to taste)
  • 1 tsp vanilla extract
  • 1/2 cup graham cracker crumbs (optional for layers)
  • Fresh raspberries and mint leaves for garnish

Instructions

  1. Melt the white chocolate chips in a microwave-safe bowl in 20-second intervals, stirring in between until completely melted. Set aside to cool slightly.
  2. Whip the heavy cream in a separate bowl until stiff peaks form.
  3. Prepare the mascarpone mixture by beating the softened mascarpone cheese, powdered sugar, and vanilla extract in another bowl until smooth and creamy.
  4. Combine the cooled, melted white chocolate into the mascarpone mixture, mixing gently to maintain the airy texture.
  5. Fold in the whipped heavy cream carefully to combine without deflating.
  6. Optional layer: Sprinkle graham cracker crumbs at the bottom of each glass if desired.
  7. Layer the mousse by spooning it into each glass alternately with fresh raspberries until filled, with mousse on top.
  8. Garnish the parfaits with fresh raspberries and sprigs of mint.
  9. Serve and enjoy after refrigerating for at least 2 hours to allow the mousse to set.
