Creamy and dreamy dessert puffs filled with banana pudding and coated in rich chocolate.

  • 1 cup water
  • 1/2 cup unsalted butter
  • 1 cup all-purpose flour
  • 1/4 tsp salt
  • 4 large eggs
  • 2 cups milk
  • 1/2 cup sugar
  • 1/3 cup cornstarch
  • 1/4 tsp salt
  • 2 large egg yolks
  • 2 tbsp butter
  • 1 tsp vanilla extract
  • 1 ripe banana, mashed
  • 8 oz semi-sweet chocolate (or chocolate chips)
  • 1 tbsp coconut oil (optional, for a smoother coating)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Combine the water, butter, and salt in a medium saucepan and bring to a gentle boil over medium heat.
  3. Add the flour all at once, stirring vigorously until a cohesive dough ball forms.
  4. Remove it from the heat and allow to cool for a few minutes.
  5. Add the eggs one at a time, stirring well after each addition until you reach a thick yet smooth consistency.
  6. Transfer the dough to a piping bag and pipe small mounds onto the prepared baking sheet.
  7. Bake for 18-22 minutes until golden brown, then let cool on a wire rack.
  8. In a medium saucepan, whisk together the milk, sugar, cornstarch, and salt, and heat over medium-low until thickened.
  9. Whisk the egg yolks and temper by adding a small amount of the hot mixture, then pour it back into the saucepan and cook for 2 more minutes.
  10. Stir in the butter, vanilla extract, and mashed banana, then cool the filling to room temperature and refrigerate for at least an hour.
  11. Cut a small slit in each puff and pipe in the banana pudding filling until overflowing.
  12. Melt the chocolate and coconut oil together, and dip each puff to coat.
  13. Refrigerate to set chocolate, then serve and enjoy!

Notes

Consider sprinkling crushed nuts or powdered sugar on top for added texture. Swap banana with other fruits for variations.
