  • 1/4 cup unsalted butter, melted

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together the softened butter and granulated sugar until light and fluffy.
  3. Add one egg and a teaspoon of vanilla extract, mixing until combined.
  4. Whisk together the flour, baking powder, and salt in a separate bowl.
  5. Gradually add the dry mixture to the wet ingredients and stir until the dough comes together.
  6. Roll the dough into 1-inch balls and arrange them on the baking sheet, leaving space between each.
  7. Press into the center of each cookie to create an indentation.
  8. Whisk together the brown sugar, corn syrup, melted butter, remaining egg, and vanilla extract for the filling. Stir in chopped pecans.
  9. Spoon about 1 teaspoon of pecan pie filling into each cookie’s indentation.
  10. Bake for 10-12 minutes until the edges are golden and the center remains soft.
  11. Cool on the baking sheet for 5 minutes before transferring to a wire rack.
