Delightful Southern-style cornbread poppers with a sweet honey and buttery flavor, perfect for any occasion.

  • 1 cup yellow cornmeal
  • 1 cup all-purpose flour (or whole wheat flour)
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup buttermilk (or 1 cup milk + 1 tablespoon lemon juice)
  • 2 large eggs
  • 1/4 cup unsalted butter, melted + extra for brushing
  • 1/3 cup honey
  • 1 cup fresh or frozen corn kernels (thawed if frozen)

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a mini muffin tin.
  2. In a large bowl, whisk together the cornmeal, flour, granulated sugar, baking powder, and salt.
  3. In another bowl, beat the eggs, then add in the buttermilk, melted butter, and honey. Stir until smooth.
  4. Pour the wet ingredients into the dry ingredients and fold gently with a spatula.
  5. Gently fold in the corn kernels.
  6. Fill each muffin cup about three-quarters full with batter.
  7. Bake for 12-15 minutes or until golden brown and a toothpick comes out clean.
  8. Brush the tops with melted butter and honey after baking.
  9. Let cool for 5 minutes before transferring to a wire rack.

Notes

For an extra special touch, try adding cayenne pepper or shredded cheese to your batter.
