Delightful mini desserts combining creamy cheesecake and crunchy crust, perfect for any occasion.

Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream, chilled
  • 1/2 cup fresh strawberries, finely chopped
  • 1/4 cup mini chocolate chips (optional)
  • 1/2 cup fresh strawberries, sliced

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Combine the graham cracker crumbs, sugar, and melted butter in a small bowl.
  3. Press the crumb mixture into the bottom of mini cupcake liners or silicone molds.
  4. Bake for 8-10 minutes until golden and fragrant. Cool completely.
  5. Beat the softened cream cheese and powdered sugar together until smooth.
  6. Add the vanilla extract and mix until combined.
  7. Whip the chilled heavy cream until stiff peaks form, then gently fold into the cream cheese mixture.
  8. Stir in the finely chopped strawberries.
  9. Spoon the cheesecake filling on top of the cooled crusts.
  10. Garnish with mini chocolate chips and sliced strawberries.
  11. Refrigerate for at least 2 hours before serving.

Notes

Serve with mint leaves for garnish and consider adding a drizzle of homemade strawberry sauce.
