A cozy, hearty dish that combines all the delicious flavors of classic lasagna into a warm, comforting bowl. Perfect for any day of the week!

Ingredients

  • 1 lb ground beef (or Italian sausage)
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 (28 oz) can crushed tomatoes
  • 4 cups beef broth (or vegetable broth)
  • 2 cups water
  • 1 tablespoon tomato paste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • 8 oz broken lasagna noodles
  • 1 cup ricotta cheese
  • 1 1/2 cups shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Fresh basil or parsley for garnish

Instructions

  1. Cook the ground beef (or sausage) over medium heat until browned, draining any excess fat.
  2. Add the chopped onion and minced garlic, sautéing for 3-4 minutes.
  3. Stir in the crushed tomatoes, broth, water, tomato paste, oregano, basil, red pepper flakes, salt, and pepper. Bring to a simmer.
  4. Add the broken lasagna noodles and cook for 8-10 minutes until tender.
  5. Mix the ricotta, mozzarella, and Parmesan cheese in a small bowl.
  6. Ladle the soup into bowls and spoon the cheesy mixture on top.
  7. Finish with a sprinkle of fresh basil or parsley.

Notes

For extra flavor, add a splash of balsamic vinegar or more red pepper flakes. Adjust salt and spices to taste.
