Ingredients

Scale
  • 4 boneless sole filets
  • Salt and pepper to taste
  • 1/2 cup flour
  • 8 tablespoons butter, divided
  • Juice from 1/2 lemon (reserve remaining lemon, sliced, for garnish)
  • 1/2 cup fresh chopped parsley, divided
  • 2 tablespoons capers

Instructions

  1. Season the sole filets generously with salt and pepper on both sides.
  2. Dredge each filet in flour, pressing lightly to coat both sides.
  3. Heat 4 tablespoons of butter in a large skillet over medium-high heat.
  4. Cook the seasoned filets for 2 minutes on one side, then flip and cook for another 2 minutes until golden brown.
  5. Transfer filets to a serving plate and cover with foil to keep warm.
  6. Add the remaining butter, lemon juice, and half of the chopped parsley to the same skillet and whisk until melted.
  7. Pour the sauce over the filets just before serving.
  8. Garnish with capers, remaining parsley, and lemon slices.

Notes

Ensure butter is at the right temperature to achieve a golden crust. For a hint of heat, add red pepper flakes to the sauce.
