Lemon Zucchini Heaven Bread

A delightful blend of fresh lemon and shredded zucchini, this bread is a sweet treat that’s easy to prepare and perfect for any occasion.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 tsp salt
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1 cup granulated sugar
  • 2 eggs
  • 1/2 cup melted butter (or oil)
  • 1/4 cup fresh lemon juice
  • 1 tbsp lemon zest
  • 1 tsp vanilla extract
  • 1 cup shredded zucchini (squeezed dry)
  • Optional Lemon Glaze: 1/2 cup powdered sugar, 1–2 tbsp lemon juice

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease a standard loaf pan generously.
  3. Whisk together the flour, salt, baking powder, and baking soda in a mixing bowl.
  4. Combine in another bowl the sugar, eggs, melted butter (or oil), lemon juice, lemon zest, and vanilla extract until smooth.
  5. Fold the shredded zucchini into the wet ingredients.
  6. Add the dry ingredients to the wet mixture, stirring until just combined.
  7. Pour the batter into the prepared loaf pan and bake for 45-55 minutes.
  8. Cool the loaf for a few minutes before transferring it to a wire rack and optionally glaze it with mixture of powdered sugar and lemon juice.

Notes

Squeeze out excess moisture from zucchini for better texture. Optionally add walnuts or spices for enhanced flavor.
