A sensational dessert that combines lemon and lime flavors with rich cheesecake and a cherry topping, finished with a crunch of pistachios.

  • 1 1⁄2 cups graham cracker crumbs
  • 1⁄4 cup unsalted butter, melted
  • 1 tbsp sugar
  • 1⁄4 cup pistachios, finely chopped
  • 2 cups cream cheese, softened
  • 1 cup sour cream
  • 3⁄4 cup sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 tbsp lemon juice
  • 1 tbsp lime juice
  • 1 tsp lemon zest
  • 1 tsp lime zest
  • 2 cups fresh cherries, pitted and halved
  • 1⁄4 cup sugar
  • 1 tbsp lemon juice
  • 1⁄2 tbsp cornstarch

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Combine the graham cracker crumbs, melted butter, sugar, and finely chopped pistachios in a medium-sized bowl.
  3. Press this mixture firmly into the bottom of a 9-inch springform pan.
  4. Bake for 10 minutes, then set aside to cool.
  5. Beat together the cream cheese, sour cream, and sugar until smooth and creamy.
  6. Add the eggs one at a time, mixing well after each addition.
  7. Incorporate the vanilla extract, lemon juice, lime juice, lemon zest, and lime zest until well combined.
  8. Pour the cheesecake batter over the cooled crust and smooth the top.
  9. Bake for about 55-60 minutes until the edges are set and the center is slightly jiggly.
  10. Turn off the oven, crack the door, and let the cheesecake cool for about an hour.
  11. Refrigerate for at least 4 hours, or overnight for best results.
  12. Cook fresh cherries, sugar, and lemon juice in a saucepan until juices release.
  13. Mix cornstarch with cold water, add to cherry mixture, and stir until thickened.
  14. Spread the cooled cherry topping over the cheesecake.

Notes

For a creamier texture, let the cream cheese sit out for about an hour before mixing. Experiment with fruit toppings for variations.
