Ingredients

  • 2 cups all-purpose flour
  • 1 tsp salt
  • 1 tsp baking powder
  • 3/4 cup warm water
  • 2 tbsp olive oil
  • 1 cup feta cheese, crumbled
  • 1/4 cup fresh mint, chopped
  • 1 tbsp lemon zest
  • 1 tbsp olive oil (for brushing)
  • Fresh parsley (for garnish)

Instructions

  1. Combine the all-purpose flour, salt, and baking powder in a mixing bowl.
  2. Gradually add the warm water and olive oil.
  3. Stir the mixture until it forms a cohesive dough.
  4. Knead the dough on a lightly floured surface until smooth and elastic.
  5. Cover the dough with a towel and let it rest for 30 minutes.
  6. Prepare the filling by mixing the crumbled feta, fresh mint, and lemon zest in a bowl.
  7. Divide the dough into portions and roll each into small balls.
  8. Flatten each ball on a floured surface and roll it into a thin circle.
  9. Place a spoonful of the feta-mint mixture in the center of each circle.
  10. Fold the dough over to create a half-moon shape and pinch edges to seal.
  11. Heat a skillet over medium-high heat and add olive oil.
  12. Cook the stuffed flatbreads for 2-3 minutes on each side until golden brown.
  13. Garnish with freshly chopped parsley and serve warm.
