A delightful Mexican Casserole filled with layers of seasoned ground meat, black beans, corn, and zesty tomatoes, topped with melted cheese for a comforting weeknight meal.

  • 1 lb ground beef or chicken
  • 1 onion, chopped
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 cup corn kernels
  • 1 packet taco seasoning
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions
  • 1 cup tortilla chips, crushed
  • 1 tbsp olive oil

Instructions

  1. Preheat the oven to 375°F (190°C) to ensure your casserole cooks evenly.
  2. Heat a tablespoon of olive oil in a large skillet over medium heat.
  3. Add the chopped onion to the skillet, cooking until softened and translucent, about 3-4 minutes.
  4. Incorporate the ground beef or chicken, cooking until it’s browned and crumbly, approximately 5-7 minutes.
  5. Stir in the taco seasoning, black beans, diced tomatoes with green chilies, and corn. Allow the mixture to simmer over low heat for 5-7 minutes.
  6. In a greased baking dish, layer the beef mixture evenly across the bottom.
  7. Top with a generous sprinkle of crushed tortilla chips.
  8. Sprinkle shredded cheddar and Monterey Jack cheeses on top.
  9. Bake in the preheated oven for 15-20 minutes, until the cheese is melted, bubbly, and starting to brown.
  10. Add dollops of sour cream and chopped green onions on top before serving.

Notes
