A delightful Mint Chocolate Cheesecake with rich, creamy textures and a refreshing minty twist, perfect for dessert lovers.

  • 1 1/2 cups chocolate cookie crumbs
  • 1/4 cup melted butter
  • 3 cups softened cream cheese
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 cup sour cream
  • 2 teaspoons peppermint extract
  • 1/2 cup heavy cream
  • 8 oz semisweet chocolate, finely chopped
  • 1/2 cup chopped mint chocolate candies
  • A pinch of salt

Instructions

  1. Preheat your oven to 325°F (165°C).
  2. Grease a 9-inch springform pan with butter.
  3. Combine chocolate cookie crumbs with melted butter in a medium bowl.
  4. Press the crumb mixture into the bottom of the prepared pan. Bake for 10 minutes.
  5. Beat softened cream cheese and granulated sugar together until smooth.
  6. Add the eggs one by one, beating well after each addition.
  7. Stir in sour cream and peppermint extract.
  8. Pour the cream cheese mixture into the cooled crust.
  9. Bake for 50-60 minutes until edges are set and center is slightly jiggly.
  10. Cool completely in the oven with the door slightly ajar.
  11. Heat heavy cream in a saucepan until simmering.
  12. Add the chopped chocolate and stir until smooth.
  13. Spread ganache over the cooled cheesecake.
  14. Sprinkle chopped mint chocolate candies over the ganache.
  15. Chill in the refrigerator for at least 4 hours or overnight.

For a healthier alternative, consider using Greek yogurt instead of sour cream and reducing the sugar content.
