A delightful dessert that combines refreshing mint and rich chocolate in a soft, moist cake roll with creamy mint filling and luscious chocolate ganache.

  • 3 large eggs, at room temperature
  • 1 cup granulated sugar

  • 1 1/2 cups heavy cream, chilled
  • 1 cup powdered sugar
  • 1/2 teaspoon peppermint extract
  • Green food coloring (optional)
  • 1 cup heavy cream
  • 1 cup semisweet chocolate chips
  • Chocolate chips (for garnish)
  • Fresh mint leaves (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 15×10-inch jelly roll pan with parchment paper.
  2. In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt until well combined.
  3. In a large bowl, beat the eggs and granulated sugar together for about 3 minutes until light and fluffy. Add the vegetable oil and vanilla extract.
  4. Gradually incorporate the dry ingredients into the wet mixture, folding until just combined.
  5. Pour the batter into the prepared pan, spreading it evenly. Bake for about 10-12 minutes.
  6. While the cake bakes, prepare the mint whipped cream by whipping heavy cream and powdered sugar until soft peaks form. Add peppermint extract and food coloring.
  7. Remove the cake from the oven, let it cool for a few minutes, then roll it up with a powdered sugar-dusted towel.
  8. Meanwhile, make the chocolate ganache by heating heavy cream and pouring it over semisweet chocolate chips.
  9. Unroll the cooled cake, spread the mint whipped cream filling, then roll it back up.
  10. Drizzle the cooled ganache over the top, garnishing with chocolate chips and mint leaves.
  11. Chill in the refrigerator for at least 60 minutes before serving.
