  • 8 oz mascarpone cheese, softened
  • 1 cup cream cheese, softened
  • 1/2 cup sugar
  • 2 eggs

  • 1/2 tsp vanilla extract
  • 1/2 cup dark chocolate chips
  • 1/4 cup heavy cream

Instructions

  1. Prepare the crust: Start by mixing the crushed graham crackers with the melted butter. Press this mixture into the bottom of a springform pan and bake at 350°F (175°C) for 8 minutes.
  2. Make the cheesecake filling: In a mixing bowl, combine the mascarpone cheese, cream cheese, and sugar. Beat until smooth, then add the eggs, orange juice, zest, and vanilla extract.
  3. Bake the cheesecake: Pour the filling over the crust and bake at 325°F (160°C) for 45-50 minutes. Let cool before refrigerating for at least 4 hours.
  4. Prepare the chocolate ganache: Heat heavy cream until steaming, then pour over dark chocolate chips and stir until smooth.
  5. Serve the cheesecake chilled, drizzled with ganache, and optionally pair with fresh berries or mint.
